Ingredients
  

  • 4 large russet potatoes peeled and diced
  • 4 cups chicken broth or vegetable broth for vegetarian
  • 1 cup heavy cream or milk for a lighter version
  • 1 teaspoon salt adjust to taste

Optional Toppings:

  • Shredded cheese
  • Cooked bacon bits
  • Green onions
  • Black pepper

Instructions
 

Cook the Potatoes:

  • In a large pot, add the diced potatoes and chicken broth.
  • Bring to a boil over medium-high heat, then reduce to a simmer.
  • Cook for 15-20 minutes, or until potatoes are soft and fork-tender.

Blend for Creaminess:

  • Use a potato masher for a chunkier soup or a blender for a smooth consistency.

Add Cream & Seasoning:

  • Stir in the heavy cream and salt.
  • Simmer for an additional 5 minutes, stirring occasionally.

Serve & Enjoy:

  • Ladle into bowls and top with cheese, bacon, green onions, or black pepper if desired.

Notes

  • Make it Healthier: Use milk instead of heavy cream for a lighter version.
  • Thicker Soup: Add a tablespoon of flour or cornstarch mixed with a little water.
  • Extra Flavor: Add a dash of garlic powder or onion powder for more depth.
