  • 2 lbs Beef Chuck Roast cut into 1-inch cubes
  • 3 large Yellow Onions thinly sliced
  • 4 cloves Garlic minced
  • 4 cups Beef Broth
  • 1 tbsp Olive Oil
  • 1 tsp Dried Thyme
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 cup Shredded Gruyere Cheese
  • 1 cup Shredded Mozzarella Cheese

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Brown the beef in batches, then remove and set aside.
  • Add the sliced onions to the pot and cook until caramelized, about 20-25 minutes. Stir in the minced garlic and cook for another minute.
  • Return the beef to the pot, add beef broth, thyme, salt, and pepper. Bring to a simmer, then cover and transfer to the preheated oven.
  • Bake for 1.5 hours, or until the beef is tender. Remove from the oven and stir in half of the Gruyere and mozzarella cheese.
  • Top with the remaining cheese and bake uncovered for another 15 minutes, or until the cheese is melted and bubbly.
  • Let the casserole rest for 10 minutes before serving.
