Instructions
Preparation Steps
Heat olive oil in a pan over medium heat.
Add the bell pepper slices to the pan and sauté until soft, about 5 minutes.
Remove the peppers from the pan. Place one tortilla in the pan and sprinkle half of the cheese onto it.
Add half of the chicken, sautéed peppers, and spoonfuls of salsa on top of the cheese.
Sprinkle cumin over the toppings, if using, and top with the second tortilla.
Cook until the bottom tortilla is golden brown, then flip to cook the other side until golden and the cheese is melted.
Repeat with remaining tortillas and ingredients. Cut into wedges and serve warm.
Notes
Try serving with guacamole or sour cream for extra flavor.
