  • 2 cups shredded cheese cheddar or Mexican blend works well
  • 4 pieces flour tortillas 8-inch size
  • 1 cup cooked chicken shredded
  • 1 medium red bell pepper sliced
  • 1 tbsp olive oil
  • 0.5 cup salsa
  • 0.25 tsp ground cumin optional

Instructions
 

Preparation Steps

  • Heat olive oil in a pan over medium heat.
  • Add the bell pepper slices to the pan and sauté until soft, about 5 minutes.
  • Remove the peppers from the pan. Place one tortilla in the pan and sprinkle half of the cheese onto it.
  • Add half of the chicken, sautéed peppers, and spoonfuls of salsa on top of the cheese.
  • Sprinkle cumin over the toppings, if using, and top with the second tortilla.
  • Cook until the bottom tortilla is golden brown, then flip to cook the other side until golden and the cheese is melted.
  • Repeat with remaining tortillas and ingredients. Cut into wedges and serve warm.

Notes

Try serving with guacamole or sour cream for extra flavor.
