  • 0.75 cup Granulated sugar
  • 0.5 cup Brown sugar Packed
  • 0.5 cup Vegetable oil
  • 2 Large eggs
  • 1 tsp Vanilla extract
  • 1.5 cups Grated zucchini Excess moisture removed
  • 1 cup Chocolate chips

Preparation Steps

  • Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  • In a large bowl, whisk together flour, baking soda, baking powder, and salt.

  • In a separate bowl, combine granulated sugar, brown sugar, oil, eggs, and vanilla extract. Mix well.

  • Add the wet ingredients to the dry ingredients and mix until just combined.

  • Fill muffin liners about 2/3 full.

  • Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
