In a small bowl, whisk together the granulated sugar and apple pie spice. Set aside.
In a separate medium bowl, combine the diced apple pie filling with the ground cinnamon, stirring until the apples are well coated.
Separate the 8 biscuits and carefully pull each one apart horizontally to create 16 thinner biscuit rounds. Flatten each round into a 3 to 4-inch circle.
Spoon about 1 tablespoon of the apple pie filling mixture into the center of each biscuit circle.
Pull the edges of the dough up and over the filling, pinching the seams tightly together to seal. Gently roll into a smooth ball.
Lightly spray your air fryer basket with nonstick cooking spray. Place the dough balls in the basket in a single layer, leaving about an inch of space between them. Work in batches if necessary.
Air fry at 350°F for 6 to 8 minutes, or until the biscuit bombs are puffed and golden brown.
