Preparation Steps
In a skillet over medium-high heat, cook ground beef until browned and cooked through, about 8-10 minutes. Drain any excess fat.
Add diced onion, minced garlic, tomato paste, tomatoes, cumin, chili powder, paprika, salt, and pepper to the skillet with the ground beef. Cook for an additional 2-3 minutes until the onion is softened.
Add beef broth to the skillet and simmer until the liquid has reduced and thickened slightly, about 5-7 minutes. Remove from heat and let cool.
Preheat the air fryer to 350°F (190°C).
Lay out the empanada discs on a clean surface. Place 2-3 tablespoons of the beef mixture in the center of each disc.
With a brush or your finger, run some water along the edge of the disc. Fold the disc in half and press firmly with your fingers. Use a fork to crimp the edges together.
In a small bowl, whisk together the egg and 1 tablespoon of water to make an egg wash. Brush the egg wash on top of each empanada with a pastry brush.
Place the empanadas in the air fryer basket in a single layer, making sure they are not touching. You may need to cook in batches.
Cook for 10-12 minutes or until the empanadas are golden brown and crispy.
Serve warm with your favorite dipping sauce.
