Delicious and easy crispy zucchini bites made in the air fryer. Perfectly seasoned with parmesan and panko breadcrumbs for a healthy, crunchy snack or side dish.
Slice the ends off of the zucchini and cut into 1-inch bite-sized pieces.
Place the zucchini pieces in a medium bowl. Drizzle with olive oil and toss to coat evenly.
Add the panko breadcrumbs, grated parmesan cheese, garlic powder, salt, and black pepper to the bowl. Toss everything together until the zucchini bites are well coated.
Place the coated zucchini in the air fryer basket in a single layer. Cook for 8 minutes, shaking the basket halfway through the cooking time to ensure even crispiness.
Remove from the air fryer and serve immediately.
Notes
For extra crispiness, lightly spray the coated zucchini bites with olive oil cooking spray right before air frying.
