Pat the zucchini fries dry with paper towels. Dip each zucchini fry first into the flour, shaking off any excess. Then, dip it into the beaten eggs, letting any excess drip off. Finally, coat it thoroughly in the panko mixture, pressing gently to adhere.
Arrange the breaded zucchini fries in a single layer in the air fryer basket. You may need to cook in batches to avoid overcrowding.
Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
