Cut the zucchini into sticks about 3 inches long and 0.5 inch wide. Pat dry with a paper towel to remove excess moisture.
Set up a breading station with three shallow bowls. Place the flour in the first bowl. In the second bowl, whisk the eggs. In the third bowl, mix together the Panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.
Coat each zucchini stick lightly in the flour, dip it into the beaten eggs, and then press it into the Panko mixture until fully coated on all sides.
Preheat the air fryer to 375°F (190°C). Lightly spray the air fryer basket with olive oil cooking spray.
Place the coated zucchini fries in a single layer in the air fryer basket, ensuring they do not touch. Lightly spray the tops of the fries with olive oil spray.
Air fry at 375°F for 8 to 10 minutes, or until the fries are golden brown and crispy. Work in batches if necessary.
Remove from the air fryer and serve warm with marinara sauce, ranch dressing, or your favorite dipping sauce.

For extra crispiness, ensure the zucchini sticks are completely dry before breading. Leftovers can be reheated in the air fryer at 350°F for 2-3 minutes.
