apple muffins

Delicious and moist apple muffins infused with cinnamon, perfect for breakfast or a snack.

  • 0.5 cup packed light brown sugar
  • 1.5 teaspoons ground cinnamon
  • 0.333 cup white sugar
  • 0.5 cup butter, softened
  • 2 pieces eggs
  • 2 teaspoons vanilla extract
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 cup milk
  • 1 large apple, peeled and finely chopped

Preparation Steps

  • Preheat oven to 350 degrees F (175 degrees C).
  • Line a muffin tin with paper liners.
  • In a small bowl, mix brown sugar and cinnamon, set aside.
  • In a large bowl, beat together butter and white sugar until creamy.
  • Add eggs one at a time, then stir in vanilla.
  • In another bowl, whisk together flour and baking powder.
  • Gradually add dry ingredients to wet mixture, alternating with milk.
  • Fold in chopped apples.
  • Fill each muffin liner about 2/3 full with batter.
  • Sprinkle the cinnamon sugar mixture on top of each muffin.
  • Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow muffins to cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

These apple muffins are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
