Instructions
Preparation Steps
Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
In a separate medium bowl, whisk together the eggs, vegetable oil, milk, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.
Gently fold the diced apples into the batter.
Divide the batter evenly among the prepared muffin cups, filling each about 0.66 to 0.75 full.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Serve warm.

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
