  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground ginger
  • 0.5 tsp salt
  • 2 eggs large
  • 0.5 cup vegetable oil
  • 0.5 cup milk
  • 1 tsp vanilla extract
  • 1.5 cups apples peeled and diced

Preparation Steps

  • Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  • In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  • In a separate medium bowl, whisk together the eggs, vegetable oil, milk, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.
  • Gently fold the diced apples into the batter.
  • Divide the batter evenly among the prepared muffin cups, filling each about 0.66 to 0.75 full.
  • Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Serve warm.

Notes

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
