  • 1.5 pounds salmon fillets skin removed
  • 1 cup julienned carrots
  • 1 cup sliced cucumber
  • 2 tablespoons soy sauce low sodium
  • 1 teaspoon sesame oil

Preparation Steps

  • Preheat grill to medium heat. Brush salmon fillets with soy sauce and sesame oil.
  • Grill salmon for 5-6 minutes per side, until fully cooked. Remove from heat and let cool.
  • In a large bowl, combine carrots, cucumber, and any other desired vegetables.
  • Flake the grilled salmon and add to the salad. Toss with extra dressing, if desired, and serve immediately.

Notes

This salad is best enjoyed fresh, but can be stored in the refrigerator for up to 2 days.
