Bacon Breakfast Casserole with Eggs and Cheese

Ingredients
- 8 slices bacon cooked crisp and crumbled
- 8 large eggs beaten
- 2 cups whole milk
- 1 teaspoon Dijon mustard
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 6 cups cubed bread day-old, cut into 1-inch cubes
- 1 1/2 cups shredded cheddar cheese divided
- 2 tablespoons chopped chives
Instructions
Heat the oven to 350°F and grease a 9-by-13-inch baking dish.
Cook the bacon in a skillet until crisp, drain it, and crumble it.
Spread the bread cubes in the prepared dish and scatter over the bacon and 1 cup of the cheddar.
Whisk the eggs, milk, Dijon mustard, salt, and pepper until smooth, then pour evenly over the bread.
Press the bread down gently so it absorbs the custard. Top with the remaining cheddar and rest for 10 minutes.
Bake for 40 to 45 minutes, until the center is set, the top is golden, and a knife inserted near the center comes out clean.
Cool for 5 minutes, scatter with chives if using, slice, and serve warm.
