Beef Barley Soup Recipe

  • 1 lb Beef stew meat
  • 1 cup Barley
  • 8 cups Beef broth
  • 1 cup Chopped carrots
  • 1 cup Chopped celery
  • 1 tsp Dried thyme
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Preparation Steps

  • Brown the beef in a large pot over medium-high heat. Remove the beef and set aside.
  • Add carrots and celery to the pot and cook until softened.
  • Return the beef to the pot. Add barley, beef broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for at least 1 hour, or until the beef is tender.
