  • 2 cups Cooked Chicken shredded
  • 1 cup Corn frozen or fresh
  • 1 cup Diced Potatoes
  • 0.5 cup Chopped Onion
  • 0.25 cup All-Purpose Flour
  • 1 cup Half-and-Half
  • 2 tablespoons Butter

Preparation Steps

  • Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Stir in flour and cook for 1 minute. Gradually whisk in chicken broth until smooth.
  • Add potatoes, corn, and chicken. Bring to a simmer and cook until potatoes are tender, about 15 minutes.
  • Stir in half-and-half and heat through. Do not boil.
  • Season with salt and pepper to taste. Serve hot.

Notes

Garnish with fresh parsley or chives, if desired. For a thicker chowder, mash some of the potatoes before adding the half-and-half.
