A simple and flavorful chicken marinade made with olive oil, soy sauce, lemon juice, and Dijon mustard. Perfect for grilling or baking juicy chicken breasts.
In a medium bowl, whisk together the olive oil, soy sauce, lemon juice, brown sugar, Dijon mustard, garlic powder, salt, and black pepper until well combined.
Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated.
Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
Preheat your grill or oven to 400°F (200°C). Remove the chicken from the marinade and discard the excess marinade.
Cook the chicken for 6 to 8 minutes per side, or until the internal temperature reaches 165°F (74°C).
Let the chicken rest for 5 minutes before slicing and serving.
Notes
Always discard any leftover marinade that has come into contact with raw meat to prevent foodborne illness. Do not reuse it as a sauce unless it is boiled first.
