  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cup Chicken broth low sodium
  • 1.5 cup Long-grain rice uncooked

Preparation Steps

  • Season chicken thighs with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs until browned on both sides. Remove from skillet and set aside.
  • Add chopped onion and minced garlic to the skillet. Sauté until softened, about 5 minutes.
  • Pour in chicken broth and bring to a boil. Add rice, stir, and return the chicken thighs to the skillet.
  • Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and chicken is cooked through.
  • Let rest for 5 minutes before serving.

Notes

Garnish with fresh parsley for added flavor. For a creamier sauce, stir in a tablespoon of butter at the end.
