Instructions
Preparation Steps
Season chicken thighs with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs until browned on both sides. Remove from skillet and set aside.
Add chopped onion and minced garlic to the skillet. Sauté until softened, about 5 minutes.
Pour in chicken broth and bring to a boil. Add rice, stir, and return the chicken thighs to the skillet.
Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and chicken is cooked through.
Let rest for 5 minutes before serving.
Notes
Garnish with fresh parsley for added flavor. For a creamier sauce, stir in a tablespoon of butter at the end.
