blueberry banana bread

This moist and delicious blueberry banana bread is packed with flavor and perfect for breakfast or a snack!

  • 1.5 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 0.5 teaspoon Salt
  • 0.5 cup Butter softened
  • 0.75 cup Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 1 cup Mashed Bananas ripe
  • 0.5 cup Blueberries fresh or frozen

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • In a separate large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  • Stir in the mashed bananas. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the blueberries.
  • Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Enjoy this bread warm or at room temperature. It's also great with a smear of butter!
