  • 1 cup All-purpose flour spooned and leveled
  • 2 tsp Baking powder
  • 0.5 tsp Salt
  • 0.75 cup Granulated sugar
  • 0.33 cup Vegetable oil
  • 1 tsp Vanilla extract
  • 0.5 cup Milk
  • 1.5 cup Fresh blueberries

Streusel

  • 0.5 cup All-purpose flour
  • 0.33 cup Granulated sugar
  • 0.25 cup Cold butter cut into small pieces

  • Preheat oven to 375°F (190°C). Grease and flour a 9-inch square baking pan.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a separate bowl, combine sugar, oil, vanilla, and milk. Add to dry ingredients and mix until just combined.
  • Gently fold in blueberries.
  • In a small bowl, combine flour and sugar for the streusel. Cut in cold butter until the mixture resembles coarse crumbs.
  • Pour batter into the prepared pan and sprinkle streusel topping evenly over the top.
  • Bake for 40-45 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cool slightly before serving.

Notes

Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream for an extra special treat.
