Rinse the fresh cranberries and pick out any stems or soft berries.
In a medium saucepan, combine the cranberries, granulated sugar, and water.

Cook over medium heat, stirring occasionally, until the sugar is dissolved and the cranberries begin to pop, about 10-15 minutes.
Stir in the orange zest and bourbon (if using).

Simmer for another 5 minutes, allowing the flavors to meld.
Remove from heat and let cool completely. The sauce will thicken as it cools.
Transfer to a serving dish and chill before serving.
Notes
This cranberry sauce can be made a day or two in advance and stored in the refrigerator. It's a wonderful accompaniment to roasted meats like turkey or pork.
