Breakfast Croissant Ring with Bacon, Egg, and Cheese

Ingredients
- 1 large refrigerated crescent roll dough sheet unrolled
- 8 large eggs beaten
- 8 slices bacon cooked and chopped
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell pepper
- 1/4 cup diced onion
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
Heat the oven to 375°F and line a baking sheet with parchment.
Cook the bacon until crisp, drain, and chop. Sauté the bell pepper and onion until tender.
Unroll the crescent dough and arrange the triangles in a ring on the baking sheet, overlapping the wide ends and leaving the points facing outward.
Whisk the eggs with the salt and pepper, then scramble them gently with the sautéed vegetables until just set.
Layer the scrambled eggs, bacon, and cheddar over the wide ends of the dough ring. Fold the pointed ends over the filling and tuck them underneath.
Bake for 25 to 30 minutes, until the dough is golden and the cheese is melted. Rest for 5 minutes, slice, and serve warm.
Use fully cooked bacon to keep the filling from making the dough soggy.
The ring is easiest to slice after a short rest.
