Broccoli Lemon Salad

A refreshing and healthy salad with broccoli, lemon, and a light dressing.

Ingredients
  

Main Ingredients

  • 1 head Broccoli Cut into florets
  • 0.33 cup Sunflower seeds Roasted
  • 0.25 cup Red onion Finely chopped
  • 0.5 cup Raisins

Dressing

  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Black pepper

Preparation Steps

  • Blanch the broccoli florets in boiling water for 2 minutes, then immediately transfer to an ice bath to stop cooking. Drain well.
  • In a large bowl, combine the blanched broccoli, sunflower seeds, red onion, and raisins.
  • In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Refrigerate for at least 15 minutes before serving to allow the flavors to meld.

Notes

Enjoy this salad as a side dish or a light lunch. You can add other vegetables like carrots or bell peppers for extra crunch and flavor.
