Broccoli Rice Casserole from Scratch

Ingredients
- 6 cups broccoli florets cut into bite-sized pieces
- 2 cups cooked white rice
- 1 small onion diced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- ¾ teaspoon garlic powder
- ½ teaspoon black pepper
- 2 cups milk
- ½ teaspoon dry mustard powder
- ½ teaspoon paprika
- ½ teaspoon salt more to taste
- 3 tablespoons cream cheese
- 2 cups sharp cheddar cheese shredded and divided
Instructions
Preheat the oven to 350°F and bring a large pot of water to a boil.
Cook the onion and butter in a saucepan over medium-low heat until softened. Stir in flour, garlic powder, and pepper; cook 2 minutes.
Gradually whisk in milk and cook until the sauce is thick and bubbly.
Remove from heat and stir in mustard, paprika, cream cheese, and 1½ cups cheddar until melted. Season to taste.
Blanch broccoli in boiling water for 1–2 minutes until bright green and crisp-tender; drain well.
Combine rice, broccoli, and cheese sauce in a greased 2-quart casserole dish. Top with remaining cheddar and bake 35 minutes, until bubbly and lightly browned.
