  • 4 oz Boneless, skinless chicken breasts Pounded to 1/2-inch thickness
  • 2 cups Roma tomatoes Diced
  • 0.25 cup Fresh basil Chopped
  • 2 cloves Garlic Minced
  • 2 tbsp Olive oil Extra virgin
  • 2 tbsp Balsamic glaze
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • In a medium bowl, combine diced tomatoes, chopped basil, minced garlic, salt, and pepper.
  • Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper.
  • Sear chicken breasts for 2-3 minutes per side, until golden brown.
  • Top each chicken breast with the tomato mixture.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through and the internal temperature reaches 165°F (74°C).
  • Drizzle with balsamic glaze before serving.

Notes

Serve immediately with a side of pasta or vegetables.
