Cannellini Bean Kale Soup

A hearty and healthy cannellini bean and kale soup, perfect for a comforting meal.

  • 2 tablespoon olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes (optional)
  • 6 cups vegetable broth
  • 2 cans cannellini beans rinsed and drained (15 ounce cans)
  • 1 bunch kale stems removed and chopped
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper or to taste
  • 1 tablespoon lemon juice freshly squeezed (optional)

Instructions
 

Preparation Steps

  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Add chopped onion and cook until softened, about 5-7 minutes.
  • Stir in minced garlic, dried oregano, and red pepper flakes (if using). Cook for another minute until fragrant.
  • Pour in the vegetable broth and bring to a simmer.
  • Add the rinsed and drained cannellini beans and chopped kale to the pot. Season with salt and black pepper.
  • Bring the soup back to a simmer, then reduce heat and cook for 15-20 minutes, or until the kale is tender.
  • Stir in lemon juice (if using) just before serving.
  • Taste and adjust seasoning as needed. Serve hot.

Notes

This soup is also delicious with a swirl of pesto or a sprinkle of grated Parmesan cheese.
