Preparation Steps
In a large pot or Dutch oven, combine the diced apples, granulated sugar, brown sugar, water, and lemon juice.
Bring the mixture to a boil over medium-high heat, stirring constantly to prevent sticking.
Reduce the heat to low and simmer for about 25-30 minutes, or until the apples are soft and the jam has thickened.
Stir in the cinnamon and nutmeg. Continue to simmer for another 5 minutes, stirring occasionally.
Remove from heat and let cool slightly. The jam will thicken as it cools.
Transfer the jam to sterilized jars, leaving 1/4 inch headspace. Seal the jars and process in a boiling water bath for 10 minutes.
Notes
Store in a cool, dark place for up to 1 year. Once opened, refrigerate and use within 2 weeks.
