Instructions
Cake
Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.

In another bowl, beat together sugar, oil, eggs, and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Stir in carrots and walnuts.
Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Let cool completely before frosting.
Frosting
In a large bowl, beat together cream cheese and butter until smooth.
Gradually add powdered sugar, beating until smooth.
Stir in vanilla extract.
Frost cooled cake.
