Catch a Husband Cake

Ingredients
  

Cake Layers

  • 2.5 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking soda
  • 0.75 teaspoons baking powder
  • 0.75 teaspoons salt
  • 2 large eggs room temperature
  • 1 cup buttermilk room temperature
  • 0.5 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot water

Cream Cheese Frosting

  • 1 cup unsalted butter softened
  • 8 ounces cream cheese softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 0.25 cup milk or heavy cream, as needed for consistency

Instructions
 

Prepare the Cake

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.

  • In a separate medium bowl, whisk together eggs, buttermilk, oil, and vanilla extract.

  • Add the wet ingredients to the dry ingredients and mix until just combined. Gradually add the hot water and mix until the batter is smooth and thin.

  • Pour the batter evenly into the prepared cake pans.
  • Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.

Make the Frosting

  • In a large bowl, beat the softened butter and cream cheese together until smooth and creamy.

  • Gradually add the powdered sugar, alternating with the milk, and beat until the frosting is light and fluffy. Stir in the vanilla extract.

Assemble the Cake

  • Once the cake layers are completely cool, place one layer on a serving plate. Spread a generous amount of frosting over the top.

  • Place the second cake layer on top and frost the entire cake, including the sides.

  • Decorate as desired. Chill for at least 30 minutes before slicing and serving.
