Cattle Drive Casserole

This hearty casserole is perfect for a busy weeknight dinner, packed with flavors and a comforting meal for the entire family.

  • 1.5 pounds ground beef lean
  • 1 cup diced onions yellow onions
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 1 cup corn frozen
  • 1 cup cheddar cheese shredded
  • 2 cups pasta shells cooked and drained

Instructions
 

Preparation Steps

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add onions and garlic to the skillet, and sauté until onions are translucent.
  • Stir in diced tomatoes and corn, cook for an additional 5 minutes.
  • Transfer the mixture to a casserole dish and mix in the cooked pasta shells. Top with shredded cheddar cheese.
  • Bake in the preheated oven for 25 minutes, or until the cheese is bubbly and golden brown.

Notes

Best served hot, and goes well with a side of green salad.
