Cayenne Cinnamon Ribs with Maple Glaze

Tender oven-baked ribs get a warm cinnamon-cayenne rub and a glossy maple glaze for a balanced sweet-and-spicy dinner.

  • 2 pounds pork baby back ribs membrane removed
  • 1 teaspoon ground cinnamon
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 cup maple syrup pure maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard

  • Heat the oven to 300°F. Pat the ribs dry and place them meat-side up on a foil-lined baking sheet.
  • Mix the cinnamon, cayenne, paprika, garlic powder, and salt. Rub the mixture over both sides of the ribs.
  • Cover the ribs tightly with foil and bake for 1 hour 30 minutes, until the meat is tender and pulls back from the bones.
  • Whisk the maple syrup, vinegar, and Dijon mustard. Remove the foil and brush the ribs generously with the glaze.
  • Raise the oven to 425°F and bake uncovered for 10 to 15 minutes, brushing once more, until the glaze is glossy and bubbling.
  • Rest the ribs for 10 minutes, then cut between the bones and serve.
