Cheeseburger Soup Recipe

A hearty and delicious cheeseburger soup perfect for a chilly evening. This creamy soup is packed with ground beef, cheese, and all your favorite cheeseburger toppings.

  • 1 lb Ground Beef Lean ground beef recommended
  • 1 medium Yellow Onion Diced
  • 2 stalks Celery Diced
  • 4 cups Beef Broth Low sodium preferred
  • 1 can Diced Tomatoes 14.5 oz can, undrained
  • 1 cup Shredded Cheddar Cheese Sharp cheddar
  • 1 cup Milk 2% or whole milk
  • 2 tablespoons Butter Unsalted
  • 1 tablespoon All-Purpose Flour
  • 1 teaspoon Salt Or to taste
  • 0.5 teaspoon Black Pepper Or to taste

Preparation Steps

  • In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  • Add the diced onion and celery to the pot and cook until softened, about 5 minutes.
  • Stir in the beef broth and diced tomatoes. Bring to a simmer.
  • In a separate small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute to create a roux.
  • Slowly whisk in the milk until smooth. Cook until the sauce has thickened slightly, about 2-3 minutes.
  • Pour the milk mixture into the pot with the beef and vegetables. Stir to combine.
  • Reduce the heat to low and stir in the shredded cheddar cheese until melted and smooth.
  • Season with salt and pepper to taste. Simmer for 10 minutes, stirring occasionally.
  • Serve hot and garnish with your favorite cheeseburger toppings, such as chopped pickles, bacon bits, or a dollop of sour cream.
