Preparation Steps
In a large skillet, brown the beef stew meat over medium-high heat.
Add the onion and garlic and cook until softened.
Stir in the potatoes and beef broth. Bring to a simmer, then reduce heat and cover. Cook for 30 minutes, or until potatoes are tender.
Stir in the shredded cheddar cheese until melted.
Serve hot.
Notes
For extra flavor, add a tablespoon of Worcestershire sauce or a teaspoon of dried thyme.
