Cheesy Keto Ground Beef Casserole

An easy, cheesy keto ground beef casserole recipe that contains only eight ingredients and is ready in 25 minutes. Perfect for a low-carb dinner!

  • 1.5 cans diced tomatoes and green chiles drained and divided
  • 1 lb 85% lean ground beef
  • 0.5 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 0.25 tsp salt
  • 0.5 cup sour cream
  • 1 cup shredded cheddar cheese

Preparation Steps

  • Preheat oven to 350 F.
  • To a large pan over medium-high heat, add one can of the drained diced tomatoes and green chiles, ground beef, chili powder, cumin, garlic powder, and salt.
  • Cook until beef is no longer pink, breaking up beef and combining mixture as it cooks.
  • Remove from heat and add mixture to an 8x8-inch casserole dish.
  • In a small bowl, combine the remaining 0.5 can of drained tomatoes and sour cream. Evenly spread mixture over beef mixture, then sprinkle cheddar cheese on top.
  • Place casserole dish in the oven and bake for 7-10 minutes, until cheese is completely melted.
  • Serve and season with additional salt to taste.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days.
