  • 1 teaspoon Baking soda
  • 1 teaspoon Ground ginger
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground cloves
  • 0.25 teaspoon Salt

Preparation Steps

  • In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the molasses and egg.
  • In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and chill for at least 2 hours.
  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • On a lightly floured surface, roll out one disc of dough to 0.25 inch thickness. Cut out gingerbread men shapes with cookie cutters.
  • Place cookies on prepared baking sheets and bake for 8-10 minutes, or until edges are lightly golden brown. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  • Decorate as desired with icing and sprinkles.
