A delightful and quick Chicken Avocado Melt that's perfect for a light lunch or dinner. Creamy avocado and savory chicken nestled between toasted bread.

  • 1 cup cooked chicken breast shredded or diced
  • 0.5 avocado ripe, mashed
  • 2 slices bread your favorite kind
  • 2 slices cheese cheddar or Monterey Jack
  • 1 tablespoon mayonnaise
  • 0.5 teaspoon lemon juice
  • 0.25 teaspoon garlic powder
  • 0.1 teaspoon salt
  • 0.1 teaspoon black pepper

Preparation Steps

  • In a medium bowl, combine the shredded chicken, mashed avocado, mayonnaise, lemon juice, garlic powder, salt, and pepper. Mix well until everything is evenly incorporated.
  • Spread the chicken and avocado mixture evenly onto one slice of bread.
  • Top with the cheese slices and then the other slice of bread.
  • Heat a lightly oiled skillet or griddle over medium heat. Place the sandwich in the skillet and cook for about 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  • Slice the sandwich in half and serve immediately.

Notes

Feel free to add a pinch of red pepper flakes for a little heat. This sandwich is also delicious with a sprinkle of chopped cilantro.
