  • 2 cups shredded cooked chicken Rotisserie chicken works well
  • 1 cup enchilada sauce
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese divided
  • 1 cup shredded mozzarella cheese divided
  • 1 can diced green chilies 4 oz can, drained
  • 1 tbsp taco seasoning

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine shredded chicken, enchilada sauce, cream cheese, 1/2 cup cheddar cheese, 1/2 cup mozzarella cheese, diced green chilies, and taco seasoning. Mix well until combined.
  • Transfer the mixture to a baking dish and spread evenly.
  • Top with remaining cheddar and mozzarella cheese.
  • Bake in the preheated oven for 20-25 minutes, or until bubbly and golden on top.
  • Serve hot with tortilla chips or fresh vegetables.

Notes

For a spicier dip, add some chopped jalapeños or hot sauce to the mixture.
