  • 1 can Black Beans rinsed and drained

  • 1 can Diced Tomatoes
  • 4 cups Chicken Broth
  • 2 tablespoons Enchilada Seasoning

Preparation Steps

  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Add onion and cook until softened, about 5 minutes.
  • Stir in cooked chicken, black beans, corn, diced tomatoes, chicken broth, and enchilada seasoning.
  • Bring to a simmer and cook for 20 minutes, stirring occasionally.
