Chicken Enchiladas Recipe

Delicious and easy Chicken Enchiladas Recipe, perfect for a weeknight meal. Filled with seasoned chicken, cheese, and topped with a flavorful enchilada sauce.

Main Ingredients

  • 2 cups Cooked Chicken, shredded Leftover rotisserie chicken works well.
  • 1 can Enchilada Sauce 10 ounces
  • 1 cup Shredded Cheddar Cheese
  • 10 flour tortillas Flour Tortillas 6-inch size
  • 1 teaspoon Chili Powder
  • 0.5 teaspoon Cumin
  • 0.25 teaspoon Garlic Powder

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a bowl, combine shredded chicken, chili powder, cumin, and garlic powder.
  • Spread a thin layer of enchilada sauce in the bottom of a 9x13 inch baking dish.
  • Fill each tortilla with chicken mixture and shredded cheese. Roll up and place seam-side down in the baking dish.
  • Pour remaining enchilada sauce over the enchiladas and sprinkle with remaining cheese.
  • Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.

Notes

Serve immediately with your favorite toppings, such as sour cream, guacamole, or salsa.
