Chicken Souvlaki
These juicy lemon-and-oregano chicken souvlaki skewers are easy to grill or broil and delicious tucked into warm pita with tzatziki.

Ingredients
- 1 1/2 pounds boneless, skinless chicken thighs cut into 1-inch pieces
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 3 cloves garlic minced
- 1 teaspoon dried oregano
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 8 small wooden skewers soaked in water
- 4 pita breads warmed
- 1 cup tzatziki for serving
Instructions
Soak wooden skewers in water for at least 20 minutes.
Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl. Add chicken and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
Thread chicken onto the soaked skewers, leaving a little space between pieces.
Heat a grill or broiler to medium-high. Cook skewers for 5 to 6 minutes per side, turning once, until browned and the chicken reaches 165°F in the thickest piece.
Rest the chicken for 5 minutes. Serve in warm pitas with tzatziki and lemon wedges.
