Chicken Stew Recipe

A hearty and flavorful chicken stew recipe, perfect for a cozy night in. This recipe is easy to follow and uses simple ingredients.

  • 1.5 lbs Chicken thighs
  • 1 cup All-purpose flour
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Vegetable oil
  • 1 large Onion, chopped
  • 2 carrots Carrots, chopped
  • 2 stalks Celery, chopped
  • 4 cups Chicken broth
  • 1 cup Frozen peas

Preparation Steps

  • Season chicken with salt and pepper. Dredge in flour.
  • Brown chicken in oil over medium-high heat. Remove chicken and set aside.
  • Add onion, carrots, and celery to the pot and cook until softened.
  • Return chicken to the pot. Add chicken broth and bring to a simmer.
  • Reduce heat and simmer for 30 minutes, or until chicken is cooked through.
  • Stir in peas and cook for 5 more minutes.

Notes

Serve hot with crusty bread or mashed potatoes.
