Chicken Taco Soup Recipe

A hearty and flavorful Chicken Taco Soup that's easy to make in under an hour! Perfect for a weeknight dinner.

  • 1 lb Chicken Breast boneless, skinless
  • 1 packet Taco Seasoning low sodium
  • 1 can Diced Tomatoes 14.5 oz
  • 1 can Black Beans 15 oz, rinsed and drained
  • 1 can Corn 15 oz, drained
  • 4 cups Chicken Broth low sodium

Instructions
 

Preparation Steps

  • Place chicken breast in a large pot or Dutch oven. Cover with chicken broth.
  • Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until chicken is cooked through.
  • Remove chicken from pot and shred with two forks. Return chicken to the pot.
  • Add taco seasoning, diced tomatoes, black beans, and corn to the pot. Stir to combine.
  • Bring to a simmer and cook for 10-15 minutes, or until heated through.
  • Serve hot with your favorite toppings.

Notes

Optional toppings: shredded cheese, sour cream, avocado, cilantro, tortilla chips.
