This sweet and smoky chipotle chicken marinade is your best grilling secret! Made with chipotle peppers, adobo sauce, honey, lime juice, and garlic, it turns up the heat and doubles as a basting sauce for perfectly grilled chicken.
Whisk together the minced chipotle peppers, adobo sauce, honey, olive oil, lime juice, minced garlic, salt, and black pepper in a bowl.
Place the chicken breasts in a zip-top bag or bowl and pour the marinade over them. Toss to coat well. Marinate in the refrigerator for at least 2 hours.
Preheat your grill to medium-high heat (375-450°F) and lightly oil the grates.
Remove the chicken from the marinade and grill for 5-7 minutes per side, or until the internal temperature reaches 165°F.
Optional: Pour the leftover marinade into a small saucepan, bring to a boil, and simmer for 5 minutes to create a safe, thickened basting sauce to brush on the chicken during the last few minutes of grilling.
Notes
For the best flavor, allow the chicken to marinate for at least 2 hours, or overnight if possible.
