Chocolate Mint Poke Cake

A decadent chocolate cake infused with refreshing mint, poked with holes, and drizzled with a creamy mint chocolate ganache. Perfect for any occasion!

  • 2 cups All-purpose flour
  • 2 cups Granulated sugar
  • 0.75 cups Unsweetened cocoa powder
  • 1.5 teaspoons Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1 cup Buttermilk
  • 0.5 cup Vegetable oil
  • 2 large Eggs
  • 2 teaspoons Vanilla extract
  • 1 cup Boiling water

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add buttermilk, oil, eggs, and vanilla extract; beat on medium speed for 2 minutes.
  • Gradually add boiling water to the batter, beating until smooth.
  • Pour batter into prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.

Notes

Let the cake cool completely before poking holes and adding the ganache.
