Christmas Gingerbread Cake

  • 2 cups all-purpose flour
  • 1 tsp baking soda

  • 0.5 tsp ground cinnamon

  • 1 cup brown sugar
  • 0.5 cup unsalted butter softened
  • 2 large eggs
  • 1 cup molasses
  • 1 cup boiling water

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, cream together the butter and brown sugar until light and fluffy.
  • Beat in eggs, one at a time, then stir in the molasses.
  • In a separate bowl, whisk together the flour, baking soda, ginger, cloves, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the boiling water until the batter is smooth.
  • Pour batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cool completely before frosting.

Notes

This cake is best served with a dusting of powdered sugar or a simple cream cheese frosting.
