In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
Remove from heat and stir in the flour until a smooth dough forms.
Let the dough cool for a few minutes, then beat in the eggs one at a time until fully incorporated.
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
Drop rounded teaspoonfuls of dough into the hot oil and fry for 2-3 minutes, or until golden brown and cooked through. Be sure not to overcrowd the pan
Remove the churros poppers with a slotted spoon and drain on paper towels.
In a small bowl, combine sugar and cinnamon. Toss the warm churros poppers in the cinnamon sugar mixture to coat.
