A zesty and flavorful cilantro lime chicken recipe that's perfect for a quick weeknight meal. Tender chicken breasts marinated in a vibrant blend of lime juice, cilantro, and garlic, then grilled or baked to perfection.
In a medium bowl, whisk together lime juice, chopped cilantro, minced garlic, olive oil, cumin, salt, and black pepper.
Place chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
Preheat your grill to medium-high heat, or preheat your oven to 400°F (200°C).
If grilling, remove chicken from marinade and discard the marinade. Grill chicken for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
If baking, place chicken on a baking sheet and bake for 20-25 minutes, or until cooked through and internal temperature reaches 165°F (74°C).
