Preparation Steps
Cook rice noodles according to package directions. Drain and rinse with cold water.
In a large bowl, combine the cooked noodles, diced mango, shredded coconut, and chopped cilantro.
In a small bowl, whisk together the lime juice, soy sauce, maple syrup, sesame oil, and red pepper flakes (if using).
Pour the dressing over the noodle salad and toss to combine. Top with chopped peanuts, if desired. Serve immediately or chill for later.
Notes
For a more substantial meal, add grilled chicken or shrimp.
