Coconut Mango Noodle Salad

A refreshing and vibrant noodle salad with sweet mango, coconut, and a zesty lime dressing.

  • 8 oz Rice Noodles Thin rice noodles
  • 1 Mango Diced
  • 0.5 cup Shredded Coconut Unsweetened
  • 0.25 cup Chopped Cilantro
  • 0.25 cup Chopped Peanuts Optional

Dressing

  • 0.25 cup Lime Juice Freshly squeezed
  • 2 tablespoons Soy Sauce Low sodium
  • 1 tablespoon Maple Syrup
  • 1 teaspoon Sesame Oil
  • 0.5 teaspoon Red Pepper Flakes Optional

Preparation Steps

  • Cook rice noodles according to package directions. Drain and rinse with cold water.
  • In a large bowl, combine the cooked noodles, diced mango, shredded coconut, and chopped cilantro.
  • In a small bowl, whisk together the lime juice, soy sauce, maple syrup, sesame oil, and red pepper flakes (if using).
  • Pour the dressing over the noodle salad and toss to combine. Top with chopped peanuts, if desired. Serve immediately or chill for later.

Notes

For a more substantial meal, add grilled chicken or shrimp.
