Instructions

• Lightly spray an 8-inch square baking pan with nonstick spray, using your fingers to spread a thin, even coating.
• Add the boiling water and flavored gelatin to a medium microwave-safe bowl and whisk until fully dissolved.
• Add the mini marshmallows and stir until every marshmallow is coated with the gelatin mixture.
• Microwave on high for 30 seconds, then whisk until the marshmallows dissolve and the mixture looks light and frothy.
• Pour the mixture into the prepared pan and refrigerate for at least 1 hour, until firmly set.
• Run a butter knife around the edges, lift the gelatin sheet onto parchment, and place it marshmallow-side up.
• Roll the gelatin sheet into a tight spiral log, starting at one edge.
• Set the log seam-side down, slice it into 12 half-inch pieces with a sharp knife, and serve.
