  • 4 lb Leg of Lamb Bone-in
  • 2 tbsp Olive Oil
  • 4 cloves Garlic Minced
  • 1 tsp Rosemary Fresh, chopped
  • 1 tsp Thyme Fresh, chopped
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Preparation Steps

  • Preheat oven to 325°F (160°C).
  • In a small bowl, combine olive oil, garlic, rosemary, thyme, salt, and pepper.
  • Rub the mixture all over the leg of lamb.
  • Place the lamb in a roasting pan.
  • Roast for 20 minutes per pound for medium-rare, or until desired doneness.
  • Let the lamb rest for 10-15 minutes before carving.
