These adorable Cookie Monster Cinnamon Rolls are a fun and delicious treat for kids and adults alike. Soft, fluffy cinnamon rolls topped with blue frosting and googly eyes!
In a large bowl, combine warm milk and yeast. Let stand for 5 minutes until foamy. Add sugar, salt, melted butter, and flour. Mix until a soft dough forms.
Turn dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Place dough in a greased bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
In a separate bowl, combine softened butter, brown sugar, and cinnamon for the filling.
Punch down the risen dough and roll it out into a large rectangle. Spread the cinnamon-sugar filling evenly over the dough. Roll the dough tightly into a log and slice into 12 rolls.
Place rolls in the prepared baking dish. Cover and let rise for another 30 minutes.
Bake for 20-25 minutes, or until golden brown.
While the rolls are baking, prepare the frosting. In a large bowl, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar and milk, beating until light and fluffy. Tint with blue food coloring.
Let the rolls cool slightly before frosting. Decorate with blue frosting, candy eyes, and mini chocolate chip cookies.
